Judy's Lamb Soup
1lb lamb tenderloins
5 medium carrots, diced
5 celery stalks, diced
1 large onion, diced
3 small sweet potatoes, peeled and diced
10 oz pack of peas
2 tbsp of cayenne pepper olive oil
(or any oil you love)
32 oz of veggie broth
Pinch of salt
Dash of black pepper
LET'S GET COOKING
Grab your favorite soup pot, turn your stove to medium heat and add the oil.
Once oil has been heated, add the lamb and sear for about 7 or 8 minutes until browned and remove from pot.
Add the carrots, celery and onion to the same pot. Let these cook until just soft.
Take ⅓ of the veggie mix and put in a food processor/blender and blend. Add back into the soup pot and stir.
Add the lamb, peas, and veggie broth into the pot. Let this simmer for about an hour.
